Rainy Day Tomato Soup

It’s raining outside, and the last thing I want to be doing is going for a long energetic walk. A long walk in the morning is a great way to get some exercise before you get really busy with your day, and it starts the blood pumping. Of course, taking it during your lunch break can help clear your head and make you more productive at work, and a walk after dinner can help you digest food. So maybe there is no best time for a walk, and you should just go out there whenever you have a spare few minutes.

Only today I am sooooo not interested in fording the rain, so instead I’m going to stay at home and make an amazing roasted red pepper and organic tomato soup. My fiancé and I spent a romantic weekend in Niagara Falls one year, and this soup and our tentative engagement came out of that weekend. I tasted the soup at a restaurant, and fell in love.

Roasted Red Pepper & Tomato Soup

Ingredients:

One whole onion (large)

A jar of roasted red peppers in water (not oil)

Fresh tomatoes

Olive oil

Low-fat milk

  • 1.   First chop up the onions really small. This will help them sauté faster. Put them in a large spaghetti pot with a dash or two of olive oil, and sauté until mushy.

  • 2.   Chop up the tomatoes and put them into the pot with the onions. The heat should not be on high enough to burn anything.

  • 3.   Once the tomatoes are mushy, add the roasted red pepper, including the liquid they came with. If you like their flavor, add more. If you think it is only okay, add a few less. Turn the heat onto low and put the lid on the soup. You want it to simmer and exchange flavors for a while. I could leave it on for an hour or more.

  • 4.   Once you feel everything is pretty mushy and mingled, add ½ cp to 1 cp of milk. Stir and let simmer again for 15-20 minutes. Do not bring to a boil.

  • 5.   Use a blender to puree the soup. I usually do it in two trips because I do not want to overfill my blender.

  • 6.   Add salt and pepper to taste. Seriously. It can make it soooo much more savory with the introduction of these simple spices. It creates a very dynamic flavor.

    Actually I had tomato soup (minus the peppers) - that’s real comfort food on a cloudy Fall day!
